DECONSTRUCTED CAJUN TURKEY POT PIE

DECONSTRUCTED CAJUN TURKEY POT PIE

INGREDIENTS:
Pot Pie:

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 1 cup diced green pepper (about 1 medium pepper)
  • 1 cup diced celery
  • 4 cups low-sodium chicken broth
  • 1 tablespoon cajun seasoning
  • 1 tablespoon garlic powder
  • 2 cups diced turkey, such as Jennie O Cajun Turkey, cut into small chunks

Biscuits:

  • 1 cupswhole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons melted coconut oil
  • 1/2 cup unsweetened almond milk (or milk of choice)

INSTRUCTIONS:
Pot Pie:

  1. In a massive saute pan, warmness the olive oil over medium warmness.
  2. add the diced onion, green pepper and celery. Saute for five mins, or until softened. add the chicken broth, cajun seasoning and garlic powder. Stir properly. deliver to a boil.

Biscuits:
