Those Black Bean & candy Potato Tacos are gluten-unfastened and vegetarian. They make a great breakfast, lunch or dinner taco recipe that is prepared in below 30 minutes!
Those black bean and candy potato tacos have become a new obsession in our residence.
Normally, each Cohl and i are big egg lovers… eating either an omelet, Migas, or every other concoction with the beloved multi-purpose egg.
But, these days we've got end up a bit uninterested in them and needed to come up with an opportunity for our breakfast ordinary… candy potato tacos!
SUPA’ QUICK SWEET POTATO TACOS
Still looking with a purpose to cook some thing up instead quickly, the candy potatoes are cubed up small in order that they can be cooked completely in a skillet.
There is no oven pre-heating or baking required with these candy potato tacos, both!! genuinely throw your elements in a skillet and sauté away.
INGREDIENTS:
- 4 cups sweet potatoes peeled, cut into 1/2-inch cubes
- 2-3 Tbsp. olive oil
- 1 small sweet onion finely diced
- 2 cloves garlic crushed
- ½ tsp. salt
- ¼ tsp. pepper
- 1 cup refried black beans
- 1-2 Tbsp. coconut oil optional
- 8 corn tortillas
- ½ cup cheese can use vegan cheese
- Cilantro
INSTRUCTIONS:
- In a huge skillet region olive oil and sweet potatoes. cowl skillet and cook over medium warmth for five-7 mins, stirring from time to time.
