Ingredients:
- 2 cups of Spanish paella rice
- 4 cups of seafood stock
- 1/2 cup of dry white wine

- 4 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 ripe tomatoes, diced
- 1 teaspoon of smoked paprika
- A pinch of saffron threads
- 1 pound of large shrimp, peeled and deveined
- 1 pound of mussels, scrubbed and debearded
- 1 pound of squid, cleaned and cut into rings
- 1/2 pound of Spanish chorizo, sliced
- Salt and pepper, to taste
- 2 tablespoons of olive oil
- Lemon wedges, for serving
Instructions:
- In a large paella pan, heat the olive oil over medium heat. Add the sliced chorizo and cook until browned, about 5 minutes. Remove the chorizo from the pan and set it aside.
- Add the diced onion to the pan and sauté for 2-3 minutes until softened. Then, add the garlic and sliced bell peppers and cook for another 5 minutes until the vegetables are tender.
- Add the diced tomatoes and cook for another 5 minutes until the tomatoes have softened and released their juices.
- Add the smoked paprika and saffron to the pan and stir to combine.
- Add the rice to the pan and stir to coat it in the vegetable mixture. Pour in the white wine and seafood stock and stir to combine.
- Bring the mixture to a simmer and then reduce the heat to low. Cover the pan with aluminum foil and cook for about 15 minutes.
